Wash the meat and dry it. Heat the olive oil in a wide, low saucepan and sauté the meat until golden brown on all sides. Add the onion and garlic and continue sautéing until soft, stirring with a wooden spoon. Quench with the wine and as soon as it evaporates add salt and pepper and add the oregano. Stir and add water to reach 1/3 of the height of the meat. Lower the heat to low and cook for about 1 hour, until the meat leaves the bone. Add the lemon, shake the pot in a circular motion to cook everywhere, cook for another 5 minutes and remove from the heat.
